Season the Steaks with salt and pepper. Place on the grill over high heat to get a good char. Rotate 90 degrees after 3 minutes. Wait approx 3 minutes more and flip over. Approx 3 minutes more and move 90 degrees to a cooler side of the grill. When internal temperature is desired remove from grill, rest 5 minutes and slice. Serve both the filet and sirloin slices.
Internal Temperature Doneness Guide:
Medium Rare: 130°F
Medium Well: 150°F
