Fortified foods: Too much of a good thing?

It appears, even in a weak economy, people are willing to pay a premium for products they think will provide a healthy boost, even if there is little proof they actually work. Such products include vitamin-enhanced drinks, candy bars with added fiber and sugary cereals fortified with calcium.

A report from the research firm PricewaterhouseCoopers shows that consumers are also spending more on foods which are spiked with nutrients to make them appear healthier.

Some nutrition experts worry about too much of a good thing. Early studies suggest that too much of vitamins A, C, E and folic acid can be risky for some people.
