1-16 oz. can hearty-style baked beans
1 small sweet onion, finely diced
1 zucchini, peeled and finely diced
1 ea. green and red bell pepper, cored and finely chopped
1 clove garlic, crushed and finely chopped
1. Gently fry the onion and garlic in a little oil in a skillet, until soft.
2. Add peppers and zucchini; continue to sauté 4-5 minutes more until ingredients are softened.
3. Add baked beans and warm through.
4. Serve in bowls accompanied with bread or muffins.
