Gazpacho

September 28, 2009 Serves 4

1 large clove garlic
1/2 cup diced green pepper, 1/2-inch pieces
1 can (28 ounce) whole peeled tomatoes
2 cups diced cucumber, 1/2-inch pieces
1 cup diced red onion, 1/2-inch pieces
1 1/2 cups diced tomato, 1/2-inch pieces
Salt and pepper to taste
1 tablespoon finely chopped chives
Sour cream

1. Put the garlic, green pepper, and can of whole tomatoes in the food processor or blender and blend until smooth.

2. Combine processed ingredients with remaining ingredients.

3. Add salt and pepper to taste.

4. Serve by placing in a bowl, sprinkling chives and placing a dollop of sour cream on top.
