Study warns cooking with gas may be harmful

Many people, including professional chefs, prefer gas over electric heat. But new research suggests that cooking with a gas flame could be harmful.

Cooking fumes contain ultra-fine particles that may cause lung damage, and a new study in the Journal of Occupational and Environmental Medicine finds gas heat may generate more of these chemicals.

Researchers compared the results of cooking steaks using gas or electric heat. They say those most affected would be professional chefs who spend long hours in a kitchen.

But, they are also warning that all cooks should reduce their exposure as much as possible.
