SALMOREJO, served with sausage & tomato skewers

Ingredients, 8 servings

  • Yellow tomato, cored and quartered 2
  • Stale bread, no crust 2 oz.
  • Olive oil 1.5 cups
  • Sherry vinegar 1/4 cup
  • Garlic 2.5 cloves
  • Salt 1 1/2 tsp
  • Water 1 1/8 cup
  • White pepper 1/2 tsp
  • Mix tomatoes, bread, vinegar, water, garlic, salt & white pepper. Let stand for 1 hour. Puree all ingredients. When mixed, slowly add in olive oil. Strain through a large-holed china cap / strainer. Serve within two days. Serve cold and be sure to stir soup before serving!

    Sausage & Tomato Skewers

    Ingredients, 8 servings

  • Fuet Sausage 1/2 lb
  • Red cherry tomatoes 8
  • Bamboo skewers 8
  • Slice Fuet on side into 1" pieces (1/8 inch think). 24 slices. Slice cherry tomatoes in half. Skewer and alternate sausage, tomato, sausage, tomato, sausage. Serve with the gazpacho!

    Gazpacho garnish

    Ingredients, 8 servings

  • Cucumber 1/2
  • Red pepper 1
  • Green pepper 1
  • Peel cucumber and remove seeds. Cut cucumber into a 1/4" diced chunks. Cut peppers into 1/4" diced chunks. Toss all ingredients together and serve sprinkled over gazpacho.
