Herb-Roasted Veggies Recipe

The Meatloaf Bakery in Chicago shares its recipe for herb-roasted veggies.

Any favorite fresh vegetables:

Corn-on-the- cob
Red peppers
Yellow peppers
Green peppers
Red or sweet onions
Cut all vegetables into sizes for skewering (1.5 inch chunks). To speed up grilling time; steam harder veggies -carrots, turnips, etc.- for a few minutes in advance to soften.)
Toss lightly with extra virgin olive oil. Add spices (dried oregano, basil, marjoram, sprinkle of parmesan, thyme, fresh pepper, sea salt); Skewer and place on grill; turn frequently so they don't burn.
Alternative method of cooking on grill. Place vegetables in disposable foil pan. Place on grill and let cook till tender. Toss periodically to prevent burning.
