- 2 Tablespoons olive oil
- 1/2 cup BBQ Sauce
- 1 cup chopped onion
- 1 pound turkey Italian sausage
- 1/2 cup chopped green bell pepper
- 1 teaspoon creole seasoning
- 2 teaspoons garlic, minced
- 1/4 teaspoon crushed red pepper
- 2 cans (28oz.) diced tomatoes
- 12 oz. whole wheat penne pasta
- 1 can (6oz.) tomato paste
- 1 teaspoon dried basil
- 1/4 cup shredded smoked cheddar cheese
- 1 teaspoon dried oregano
- 1 cup sliced mushrooms
- 1 cup sliced yellow squash
- 1 cup sliced zucchini
Heat oil in a large sauce pan over medium-high heat. Crumble turkey sausage into pan; discard casings. Add onion, green bell peppers, and garlic; cook for 8 minutes stirring occasionally. Add tomatoes, tomato paste, basil, creole seasoning, oregano, crushed pepper, and bbq sauce; bring to a simmer. Simmer uncovered for 20 to 25 minutes or until sauce is thickened. Add mushrooms, zucchini and squash and simmer for 5 minutes until vegetables are tender. Serve over hot cooked pasta; sprinkle with cheddar cheese.
