Insalata D'Farro

Boil 1 lb Farro grains in salt water for 15 minutes, drain water, set aside

Dice 1 zucchini

Dice 1 carrot

Add 3 pcs Button mushrooms

Cut up 1 red pepper

Chop 1/4 cup black olives

Add 1-2 tbsp Extra Virgin olive oil to vegetables and roast at 350 degrees for 10 to 15 minutes

Place vegetables, Farro, olives in a large bowl, then mix

Add one half fresh-squeezed lemon

2 tbsp balsamic vinegar
