Rotolini Di Melanzane con Ricotta

Rolled grilled eggplant stuffed with ricotta cheese, sun-dried tomatoes, roasted pepper, fresh basil. Recipe from Chef Cristiano Bassani of Bapi Ristorante.

Remove skin from one large eggplant, slice in to thin pieces, then grill until soft (but not falling apart)

Puree 5 oz sun dried tomatoes

Roast 5 oz red pepper, cool (puree with tomatoes)

Add ricotta cheese, puree mix of tomatoes and red pepper, to slices, then roll slices Add fresh basil

Serves 4
