2 lbs pears, peeled and coarsely chopped
1/4 inch piece ginger, peeled
6.5 oz sugar
Club soda or sparkling water
Cook. Put pears and ginger in a medium sized pot. Sprinkle sugar over the top. Add water to the pot, just enough to barely cover the pears. Turn heat on to medium and cook until the pears are very soft.
Puree. Carefully move the hot mixture to a blender and blend until completely smooth. Transfer to the refridgerator to cool.
Taste. Pour puree into a glass with ice and top with club soda or sparkling water.
