So, Tony Stallone from Peapod (www.peapod.com)came into our ABC7 studio kitchen to show us how to make some great dips without all the usual calories.
Tony's Recipes:
Goat Cheese Basic Recipe:
Combine equal parts of softened cream cheese and goat cheese.
Hot Crab Dip
Ingredients:
1/2 cup goat cheese basic recipe (see above)
3/4 cup artichoke hearts, chopped
1/4 cup mayonnaise
1/2 cup parmesan cheese, grated
2 Tbsps. red pepper, diced
2 Tbsps. yellow pepper, diced
2 Tbsps. green onion, sliced
1/2 tsp. chopped garlic
3/4 cup fresh crabmeat pod id 137353
1 Tbsp. parmesan cheese
1 Tbsp. green onion, sliced
Preparation:
Mix together first eight ingredients.
Fold crabmeat into above mixture.
Place mixture into baking dish.
Sprinkle with parmesan cheese.
Garnish with green onion.
Bake for 20 minutes in 325 degree oven, or until bubbly and golden.
Hot Buffalo Chicken Wing Dip
Ingredients:
1/2 cup goat cheese basic recipe (see above)
1/2 cup shredded cooked white chicken
1/4 cup buffalo wing sauce
1/4 cup ranch salad dressing
2 Tbsps. crumbled bleu cheese
1 cup cheddar cheese, finely shredded
Preparation:
Spread in bottom of small baking dish, or form into star shape, if desired.
Layer with next five ingredients.
Bake 10-15 minutes in 325 degree oven, or until cheese is melted.
Serve with celery sticks.
Baked Goat Cheese with Green Pepper Pico de Gallo
Ingredients:
1 cup goat cheese basic recipe (see above)
1 Tbsp. toasted pine nuts
Green Pepper Pico de Gallo (recipe below)
Preparation:
Mix cheese and pine nuts together.
Spread in bottom of small baking dish, or form into Christmas tree shape, if desired.
Top with Green Pepper Pico de Gallo.
Bake 10-15 minutes in 325 degree oven.
Serve with pita chips.
Green Pepper Pico de Gallo
Ingredients:
1/2 cup green peppers, diced
2 Tbsps. grape tomatoes, diced
1 Tbsp. jalapeño, finely diced
2 Tbsps. fresh cilantro, diced
1 Tbsp. lime juice
1 Tbsp. olive oil
1/2 tsp. dried oregano
Preparation:
Mix together
Baked Goat Cheese with Pesto Sauce
Ingredients:
1 cup goat cheese basic recipe (see above)
1 Tbsp. toasted pine nuts
fresh pesto sauce
Preparation:
Mix cheese and pine nuts together.
Spread in bottom of small baking dish, or form into wreath shape, if desired.
Top with pesto sauce.
Bake 10-15 minutes in 325 degree oven.
Serve with fresh bell pepper strips.
Baked Goat Cheese with Fresh Salsa
Ingredients:
1 cup goat cheese basic recipe (see above)
1 Tbsp. toasted pine nuts
Andrew's Fresh Salsa pod id 150119
Preparation:
Mix cheese and pine nuts together.
Spread in bottom of small baking dish, or form into Christmas stocking, if desired.
Top with salsa.
Bake 10-15 minutes in 325 degree oven.
Serve with crusty French bread slices.
