Gluten-free Mediterranean Food

A $4.2 billion industry and growing, gluten-free foods and beverages are gaining popularity as health-conscious consumers, those with food allergies and supportive family members flock to the diet.

Chef Grant's highlights include vitello tonnato, a sliced roast beef with tuna caper citrus dressing; haloumi and grated carrot, a seared sheep cheese with orange supremes and cayenne honey; woodfired farinata, a chick-pea flour cake; and grilled lamb kebobs with couscous, fennel, grapefruit and scallions; among other easy-to-make plates. The menu, a mash-up of healthy Mediterranean dishes, is inspired by the distinct cultures and cuisines of Spain, France and Greece, and would be perfect to replicate for family and friends this summer.
