Chocolate Truffles -- Morton Arboretum

Jenelle Hardtke, Special Events Manager, The Morton Arboretum, and Katherine Duncan, Owner & Confectionista of Katherine Anne Confections, joined us live during our ABC 7 Eyewitness News Saturday Morning to share truffle recipes with us.

Katherine's Recipe:
Salted Caramel Truffle
Ingredients:
8 oz semisweet chocolate
8 oz milk chocolate
6 ounces caramel
5 ounces cream
1/3 t. salt

Preparation:
Heat cream & caramel together until almost boiling.
Let sit for 5 minutes.
Stir caramel until fully emulsified.
Add chocolate & salt.
Warm for another 1-2 minutes, then stir gently for 10 seconds.
Let sit for 1 minute.
Stir again.
If the chocolate is not melted, microwave in 10 second increments until completed.
Chill completely.
Scoop, and roll in a mixture of sugar & salt, toffee & salt, or cocoa powder.
