Rabbi Margaret Frisch Klein has been eating on only $4 a day! It's called the SNAP Challenge, and the idea is to live on a food budget similar to those who receive Supplemental Nutrition Assistance Program aid.
With Passover approaching, the Rabbi from Elgin decided to use the challenge to raise awareness about the systemic issues surrounding poverty. Her husband and members of her synagogue, Congregation Kneseth Israel, jumped on board.
Rabbi Frisch Klein shared some of the struggles she's encountered so far, and what a typical meal really looks like on such a limited budget.
