Eggs usually find their way into breakfast, but a new restaurant that began life as a food truck, thinks they're perfect for lunch too.

CHICAGO (WLS) -- Grabbing a quick breakfast or lunch in the Loop doesn't have to mean compromising quality with the typical fast food offerings. The Eastman Egg Company has been working on improving sandwiches long before it opened a store directly across from the Opera House on Wacker.

"The idea came to me because I love breakfast sandwiches, I lived in New York, why are they not in San Francisco; I moved out to Chicago and rather than starting with a restaurant I started with a food truck," said Founder Hunter Swartz.

The ham and eggs are local, and star in their namesake sandwich, with its Egmont Cheese, sliced cucumbers and homemade sweet chili sauce served on ciabatta. But even an egg salad sandwich gets a boost, thanks to basil and caramelized onions served on French bread. The Turkey Cuban subs out the pork, and instead contains smoked turkey, along with country ham, white cheddar (instead of Swiss), plus homemade garlic mayo and pickles shmeared with a housemade spicy honey mustard.

They also offer grain bowls, thanks to some unique local partnerships.

"A partnership with Baker Miller, the original folks behind Bang Bang Pie, and that's a grits bowl with red eye gravy, a soft-boiled egg and a little bit of ham on top and it's a really interesting that could go all the way through breakfast or all the way to lunch," said Swartz.

They're also pretty serious about the coffee program here at Eastman. They use Sparrow coffee roastery for the iced coffee, and if you really love it, get a 64 ounce growler to bring it home, as long as you bring it back here to get it refilled.

Just about all of the sandwiches on the menu can also be turned into bowls, if you're skipping the bread.
