Quick and Easy Dump Dinners
A new type of quick and easy cooking solution is letting families spend more time together.

CHICAGO (WLS) -- With family schedules making it harder and harder to cook homemade meals, a new type of quick and easy cooking solution is letting families spend more time together. Cathy Mitchell, author of "Quick and Easy Dump Dinners" is sharing some of her favorite recipes. She stopped by the ABC7 studios to give us a taste.

Best Baked Ravioli

Serves 4 to 6

Ingredients:

1 25 oz bag frozen ravioli, your choice of meat, cheese or veggie

1 jar 26 oz jar marinara sauce

2 cups shredded mozzarella cheese

2 cups fresh baby spinach

Parmesan cheese

Directions:

1. Preheat oven to 400 degrees.

2. Spray bottom and sides of a 9x13 rectangular baking dish with cooking spray.

3. Spread 3/4 cup of the pasta sauce in baking dish. Arrange half of the frozen ravioli in a single layer over the sauce; top with half of the remaining pasta sauce and half of the mozzarella cheese.

4. Spread spinach over cheese and repeat layer, starting with ravioli, remainder of sauce, and rest of cheese. Sprinkle with Parmesan cheese.

5. Cover with aluminum foil and bake for 30 minutes. Remove foil; bake uncovered for 10 to 15 minutes longer or until bubbly and hot in the center. Let stand for 10 minutes before serving.

Deeply D'Lish Pizza

Ingredients:

1 tube Grands biscuits

1 cup marinara sauce (jarred or homemade)

Pepperoni slices (can use turkey pepperoni)

Sliced olives

1 cup mozzarella cheese shredded

Directions:

1. Cut each biscuit into 6 pieces and drop in bottom of glass or ceramic baking pan sprayed with nonstick spray.

2. Cut pepperoni slices into quarters and distribute over biscuits.

3. Add sliced olives and then a layer of sauce, about 1 cup. (add in blops, and do not cover entire surface).

4. Sprinkle with light layer of cheese.

5. Bake at 325 for 25 to 30 minutes.

Tip: You can use any topping as long as the will cook properly in 25 minutes; avoid raw meat.
