
CHICAGO (WLS) -- ABC7 Chicago was Cooking up a Storm Thursday with restaurant-quality sandwiches you can make from home.
Graham Akroyd, executive chef at Wolf & Company in Bucktown, joined ABC7 Chicago to tease the restaurant's new sandwich menu and talk through how to make one of their Whitefish Salad Sandwiches.
Wolf & Company is located at 1752 N. Western Ave. and is the only space in Chicago with direct access to Chicago's 606 trail. The restaurant also includes a deli, grocery store, bar and cafe.
Ingredients:
- 4 pounds smoked whitefish
- 1/2 cup olive oil
- 1/2 cup lemon juice plus zest
- 2.5 tbl dijon
- 2.5 tbl horseradish
- 1 cup small diced red onion
- 1/2 cup parsley
- 1/2 cup chives
- 2 cups small diced celery
- 1 tbl salt and pepper
Instructions:
1. Gather all ingredients, combine all ingredients in a bowl, mix thoroughly.
2. How to build the sandwich
- 1 cup of whitefish salad
- 1 crusty baguette
- 8 pickled green beans
- 1 cup of potato straws
- Mayo
- Arugula
3. Cut baguette length-wise, add a generous amount of mayo on both sides, working from the bottom, arugula, whitefish salad, pickled green beans, then the potato straws.
