

CHICAGO (WLS) -- ABC7 Chicago was Cooking up a Storm Thursday with an Evanston chef.
Tom Carlin is executive chef of Burl, located at 2545 Prairie Ave.
The restaurant opened in January in Evanston. It added Sunday brunch in March.
Carlin made shakshuka.
Stewed Tomatoes:
- 6 whole fresh or one can of tomatoes
- 2 tsp. ground cumin
- 1 Tbs. ground coriander
- 1 tsp. ground black pepper
- 1 Tbs. extra virgin olive oil
Toast the spices in the oil, add the tomatoes, cook and puree.
To make the Shakshuka, sautee the roasted summer veggies, add the tomato sauce and bring to a simmer.
Add the eggs and cover. Once the eggs are cooked to your liking, drizzle the cilantro relish and top with herbs. Serve with a soft pita on the side.
