Chicago chef celebrates National Homemade Soup Day with minestrone

National Homemade Soup Day brought comfort to the kitchen as Chef Jose Rivera of SABA Italian Bar + Kitchen shared how to make a hearty minestrone from scratch.

Rivera, who joined SABA late last year, has focused on turning the restaurant into a scratch kitchen, preparing everything in-house. The minestrone, a new addition to the menu, reflects that approach and is featured during Chicago Restaurant Week.

During ABC7 Eyewitness News segment, Rivera offered simple tips for home cooks, including seasoning as you go and letting soup rest to build flavor.
