
CHICAGO (WLS) -- Many people think of watermelon as a summer snack, or a light and refreshing dessert, but watermelon goes great in savory recipes as well.
Christ Koetke, host of "Let's Dish" on the Live Well Network, uses watermelon for a Mediterranean salad.

Recipe for Mediterranean Watermelon Salad
Difficulty: Easy
Prep time: 25 minutes (plus time to freeze the watermelon slices)
Cook time: 0 minutes
Serves: 6
Ingredients:
6 1/4-inch slices of seedless watermelon, ideally yellow watermelon to provide a nice color contrast
3/4 cup diced cucumber
8 oz. fresh mozzarella, diced
1 tomato, quartered and then thinly sliced
3 Tablespoons minced red onion
1/4 cup chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
5 Tablespoons extra virgin olive oil
3 Tablespoons red wine vinegar
Method:
1. Place the slices of watermelon on a baking sheet lined with plastic wrap. Place another sheet of plastic wrap on top of the watermelon. Put the slices in the freezer until they are completely frozen.
2. In a large bowl, combine all the remaining ingredients.
3. To serve, place a frozen piece of watermelon on a plate. Top with the salad, and serve.
