Saganaki

What is not to love about sauted and flambed cheese? Flaming saganaki is exactly that and irresistible. The Greek dish was invented in Chicago's Greek Town! Let's Dish host Chris Koetke, from the Live Well Network, has the recipe. You can find more recipes likes this on the Live Well Network.

Recipe for Saganaki

Difficulty: Easy
Prep time: 5 minutes
Cook time:4 minutes
Yield: 2

Ingredients:
7-8 oz. Kasseri cheese, cut into -1/2 inch thick slices
Flour for dredging
1 1/2 Tablespoons extra virgin olive oil
2 Tablespoons ouzo
Lemon wedges
Hot pita bread

Method:
1. Dip the cheese slices in water and then while they are still wet into the flour, so as to coat them well.
2. Heat a saut pan, slightly larger than the pieces of cheese, on high heat. Add olive oil and once the oil starts to smoke, the cheese.
3. Once the first side starts to melt and forms a crust, flip them over using a metal spatula. Continue cooking for a couple more minutes until the cheese melts more and another crust has formed on the other side of the cheese.
4. Pour the ouzo into the pan and ignite it by tilting the pan (if a gas stove) or using a lighter (if an electric stove). This can also be done in front of the guests. Be aware as it will flame up considerably since the pan is hot. (It is customary at this point to shout-Opa!)
5. Squeeze some lemon juice on top and serve in the pan with pita bread.
