
CHICAGO (WLS) -- Shokran Moroccan Restaurant celebrates 18 years in Chicago this year.
Yields 4
Ingredients:
-8 pieces of chicken tenders or 4 chicken breasts
-4 yellow onions, diced
-3 cloves of garlic, minced
-1/4 preserved lemon, finely chopped
-4 oz olive oil
-1 teaspoon salt
-1/2 teaspoon black pepper
-1 teaspoon ground ginger
-1 teaspoon ground turmeric
-Pinch of saffron
-1 cup Kalamata olives
Preparation:
1. In a large pan, heat the olive oil over medium heat. Add the diced onions and sauté until translucent.
2. Add the garlic, chicken, preserved lemon, and all the spices. Mix well.
3. Cover and cook for about 30 minutes, just make sure the chicken reaches an internal temperature of 165°F.
4. Remove the chicken and set aside.
5. Continue cooking the onions until they are fully caramelized.
6. Return the chicken to the pan, add the olives, and cook together for 5 minutes.
To Serve:
Serve as is, or top with crispy potatoes for added texture.
