Tracy's Mom's Microwave Peanut Brittle Recipe

1 CUP SUGAR
½ CUP LIGHT CORN SYRUP
DASH SALT
1 CUP PEANUTS
1 TSP. BUTTER
1TSP. VANILLA
1 TSP. BAKING SODA

In a 4 cup glass measuring cup, stir sugar, corn syrup and salt together. Microwave on High for 4 minutes.
Add peanuts, stir and microwave on high for 3 ½ minutes.
Add butter and vanilla, stir and microwave for 1 ½ minutes
Add baking soda (It will fizz and forth) stir and pour into lightly buttered jelly roll pan
Cool
Break into pieces.

A couple of notes:
DO NOT MAKE ON DAMP, HUMID DAYS
Also, microwave wattage can vary. Watch the process closely. You may want to reduce the times a little so it doesn't burn

Cooking time – 9 minutes

Judy's FAVORITE OATMEAL CHOCOLATE COOKIE recipe
Makes almost 100 cookies, can cut in half. Super simple. Enjoy!!!

2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 tsp. vanilla
4 cups flour
5 cups oatmeal
1 tsp. salt
2 tsp. baking power
2 tsp. baking soda
24oz. chocolate chips
16oz. Hershey bar grated (can add more if you'd like)
3 cups nuts (optional, I don't use nuts in mine)

Blend oatmeal in blender to find powder. Cream butter, both sugars. Add eggs & vanilla. Mix together with flour, oatmeal, salt, baking powder & baking soda. Add chips, grated chocolate, nuts. Roll into balls. Place on cookie sheet. Bake 10 minutes at 375 degrees.
