Dad's Southwest Breakfast Burritos

  • 1 package Jimmy Dean Hot Roll Pork Sausage
  • 1 red bell pepper, chopped
  • 8 eggs, lightly beaten
  • 1 cup salsa
  • 1/4 cup chopped cilantro (optional)
  • 8 8 -inch flour tortillas
  • 1 cup (4 oz.) shredded Mexican cheese blend
  • 1 can (15 oz.) black beans, rinsed, drained
  • Sour cream, additional salsa and chopped cilantro (optional)
  • Directions

    Cook sausage and red bell pepper over medium-high heat, stirring frequently until meat is thoroughly cooked and no longer pink; drain sausage. Add eggs and cook, stirring occasionally for 5 minutes or until no liquid egg remains. Stir in salsa and cilantro, if desired; heat through. Warm tortillas according to package directions. Place ½ cup of sausage-egg mixture onto each tortilla, top with and about ¼ cup of beans and 2 tablespoon cheeses. Fold in opposite sides of tortilla, then roll up burrito-style. Serve with sour cream and additional salsa and cilantro, if desired.

    Yield: Makes 8 servings (1 burrito each)
