After preparing your orange molasses sauerkraut (recipe below), pan fry your Krakus Ham steaks:
Add 1 tbsp. of vegetable or canola oil to a pan, place a 1/2 ham steak into the preheated pan and let it cook for 3 to 4 minutes per side, depending on thickness. Aim for a golden crust on the outside and an internal temperature of 160 degrees F.
Remove from heat and place on a rack to rest for several minutes. Letting most meats rest allows juices that have bubbled to the exterior of the meat absorb back into it. Serve with Orange Molasses Sauerkraut.
Orange Molasses Sauerkraut
Saute 1/2 cup julienne red onion in just enough butter to prevent sticking in your pan, brown without wilting them. The add:
2 T Molasses
1/2 t Marjoram, ¼ t black pepper, 1T fresh chopped parsley,
1/4 t ground ginger or 1t fresh minced ginger,
1 heaping cup drained sauerkraut, refrigerated over canned is preferred.
1 T fresh grated orange zest or ¼ t orange oil
Add all ingredients into the pan, simmer for a minute or two and remove from the heat. If you use Orange Oil, blend it into the molasses first to insure an even flavor blend. If you use orange zest, sprinkle in at the end to avoid exposing it to unnecessary cooking time.
