Chef Shawn Doolin's Recipe: Fried Green Tomato Sliders
Ingredients:
2 Green tomatoes
1 Cup Buttermilk
1 large egg
1/2 cup cornmeal
1/2 cup flour
1 cup oil for frying
1 cup mayonnaise
3 tsp siracha
1 ½ tsp fresh chopped garlic
1 tsp Cajun red seasoning salt
1 tsp fresh lemon juice
1 tablespoon fresh chopped parsley
1 cup fresh arugula
Pretzel rolls
Preparation:
Sliced tomatoes into 6 slices each. Season both sides of the tomatoes with salt and black pepper. Combine Buttermilk and the eggs in a bowl. In a separate bowl combine cornmeal and flour. Dredge the tomato slices in the buttermilk and egg mixture. Place directly into the flour and cornmeal mixture to coat the tomato.
Heat the oil to 300 degrees. When the oil is ready, fry the tomatoes to golden brown on both sides.
In a pan sautéed the garlic with 2 T of the olive oil. Add red seasoning salt and cool. Combine the mayonnaise, siracha, lemon juice, fresh parsley and add garlic oil seasoning mix. Toast the pretzel buns, add siracha aoli on both sides with the fried green tomato and fresh arugula.
