Cooking Up A Storm: Marco's Kitchen

CHICAGO (WLS) -- Chef Marco Conte shared an easy Valentine's Day recipe on Cooking Up A Storm.

Marco's Kitchen in La Grange opened on March 17, 2020; the was the same day Illinois shut down for the pandemic.

Six years later the upscale restaurant is still a local favorite!

Chef Marco Conte shared an easy Valentine's Day recipe with Tracy Butler.

The recipe for Orange Sabayon serves about eight to ten people.

It's described as an elegant, light and airy French custard served with fresh assorted berries.

Ingredients

- 4 Cups of Heavy Whipping Cream
-8 Egg Yolks
-1 Cup of Granulated Sugar
-1 Teaspoon Pure Vanilla Extract
-1 Cup of Grand Marnier
-Orange Cognac
-5 Cups Fresh Berries: Strawberries, blueberries, blackberries, raspberries
-Fresh Mint Leaves for garnish

Recipe

1. Place heavy whipping cream into a large bowl and whisk until soft peaks form. Refrigerate until later.
2. Place a small saucepan filled halfway with water on medium heat and bring to a simmer.
3. For the custard: Use a small bowl that fits tightly over the top of the simmering water saucepan.
4. Place egg yolks, sugar, vanilla and Cognac into the bowl and whisk to combine.
5. Place the bowl over the saucepan with simmering water and whisk constantly for four to five minutes.
6. When cooked the custard will have a smooth, glossy and thick texture.
7. While whisking, cool the mixture in an ice bath
8. When cooled, fold the orange custard into the chilled whipping cream; mix until thoroughly combined.
9. Transfer custard into an airtight container and refrigerate until ready to serve.

Orange Sabayon can be made the day before serving.
