Brown Sugar Oatmeal Pancakes

May 4, 2009 Everybody likes pancakes, and they're one of the easiest meals to prepare, Ginny says. Get everybody in on the act. Littlest children can pour pre-measured ingredients into the bowl. Older kids can crack eggs and mix with a whisk. This recipe adds a "special occasion" twist to an old favorite.

10 Tbsp. quick cooking oats
1/2 c. whole wheat flour
1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. packed brown sugar
1 egg
2 Tbsp. vegetable oil
1 c. buttermilk

In a small bowl combine the oats, flours, baking soda, salt and sugar. In another small bowl, beat the egg, oil and buttermilk. Stir into dry ingredients just until moistened. Pour batter by 1/3 cupful onto a greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown.
