Savory and sweet breakfast in Bolingbrook

While you'd expect to see fruit smoothies and fresh-squeezed OJ at a breakfast joint, the menu at Eggs, Inc. Cafe in a Bolingbrook strip mall seems to have a lot more ambition than its Greek diner roots.

"I still like the diner kind of concept, but it's better service, fast service and the kids change. They want in-and-out nowadays," said Gus Vassos, co-owner of Eggs, Inc.

But it's going to be hard to simply zip in and zip out when confronted with the Hollywood Omelet, mainly because the guacamole, mushrooms and cheese embedded within the fluffy eggs are so filling. Pancakes come either plain - sometimes shaped like a famous mouse - or they can be embedded with chocolate or even served along with tart yogurt, fresh berries and crunchy granola. Their Dutch baby pancake is thin at the core, but higher on the sides with the slightest hint of lemon and powdered sugar.

The Nutella crepes, meanwhile, feature not only sliced strawberries and sauteed bananas on the inside.. they show up again as toppings on the outside. Vassos acknowledges a number of sweeter options on his breakfast menu.. but says customers treat them almost like dessert.

"I think what is happening is they're coming in and ordering their original, whatever they would get anyway and then they'll split a pancake, a sweeter pancake for, as a dessert," said Vassos.

If you didn't want to have a dessert breakfast item, the nice thing about the restaurant's location is it's right next door to an Andy's Frozen Custard stand.
