4 to 6oz Tenderloin/ Filet/ Sirloin, Cut Into 1/8" to 1/4" Slices
1/2 t Sea Salt (Can Use Kosher Salt)
1/4 t Black Pepper, Freshly Cracked
1/8 t Cumin
1/8 t Cayenne pepper
2 oz Arugula
12 Toast points
6 Grape Tomatoes, Halved
Combine just the seasonings.
Lay plastic saran wrap on cutting board, place one slice of beef, and sprinkle both sides with seasoning mixture.
Place another saran wrap on top, then with a mallet or heavy spoon, pound meat until very thin.
Remove plastic wrap and cut any visible fat away and cut into smaller pieces.
Take one toast point, place a small of arugula on top, then tenderloin, halved grape tomato and drizzle with basil oil.
