There are many options and varieties when it comes to the sparkling wine and champagne. Craig Cooper from Chicago's Pops for Champagne, which is celebrating 30 years in business, helps explain the differences between champagne and sparkling.

All good sparking comes from a place. Champagne, Cava, Prosecco area all places that have guidelines that determine the "what" and the "how". Vintage is only a factor with true champagne. Be careful as many benefit from further aging. Most sparkling wines are brut. If you are looking for a sweet variety, try Prosecco and Demi-Sec Champagne.
