Of course, part of the traditional observation involves food, and Joey Morelli, Chef at Max's Deli came into our ABC 7 Eyewitness News studio to show us how to make a few dishes and to explain their meaning.
Chef Morelli's Recipe: Matzo Ball Soup
Ingredients:
Matzo Ball recipe: (makes 10 balls)
- 5 eggs
- 2T veggie oil
- 2 cups matzo meal
- 1/2 gallon chicken broth
- 1/4 t white pepper
- 1/4 t dry dill
- 1/4 t kosher salt
Preparation:
1. Whip eggs amd oil 3 minutes till fluffy
2. Fold in matzo meal slowly with rubber spatula
3. Mix salt, pepper and dill into dough
4. Cover and let sit 1 hour
5. Bring broth to a simmer
6. Form balls with a 3oz ice cream scooper and roll in your hands till smooth & round
7. Drop in broth and simmer 30 minutes
8. Cool in ice bath till ready for service
