1 cup Water
1 cup Sugar
2 Lemons (use the spent lemons used for radishes and pistou)
4 Tbsp Lemon Juice
1 liter San Pellegrino Or Other Sparkling Water
1. In a small saucepan, bring water, sugar and spent lemons to a simmer; reduce until syrupy consistency; cool.
2. In a glass filled with ice, add one tablespoon of lemon juice and fill halfway with San Pellegrino.
3. Pour in lemon syrup to finish filling glass.
