Ceviche with Mint and Grapefruit

What you need
  • 1 ruby red grapefruit
  • 1/2 red onion, finely diced
  • 1/2 Serrano chile, minced
  • 1/4 cup fresh lime juice
  • scant 1/4 cup Hornitos blanco tequila
  • 1/2 lb sushi grade tuna, scallops, or shrimp, cut brunoise
  • 1/4 cup cilantro
  • 2 corn tortillas, sliced thin and pan fried
  • How to make it work

    supreme grapefruit, reserving as much juice as possible, set supremes aside

    add all other ingredients, except mint

    combine gently and cover for 2 hours

    to finish, add grapefruit supremes and mint

    season with salt and pepper

    To serve:

    put on small spoon for a one bite amuse, garnish with cilantro sprig and tortilla frizzle

    alternative presentation: serve on top of a tortilla chip
