BBQ Shrimp

BBQ Shrimp;
  • 6 large shrimp, shelled and deveined
  • 1 wooden skewer, soaked in water
  • salt and pepper
  • olive oil spray
  • BBQ sauce
  • Salt and pepper the shrimp, lightly, and spray with olive oil spray
  • Place onto grill and brush liberally with the sauce
  • Grill for two to three minuted or until done
  • SAUCE;

  • Dry rub (cumin, brown sugar, garlic powder, onion powder, Old Bay, > dried mustard, cinamon, cayenne)
  • Cider Vinegar
  • 1 12oz bottle of Round Barn Cocoa Stout
  • 1 bottle of your favorite commercial BBQ sauce
  • 1/2 pound of bacon
  • Combine beer, dry rub, vinegar in a sauce pan and bring to a boil
  • Reduce to a simmer until the sugars caramelize and the mixture coats
  • the back of a spoon
  • While your mixture is reducing put the bacon into a 400 degree oven and cook for twenty minutes or until crispy
  • Once the mixture has reduced add the bottle of commercial BBQ sauce, bring back to a boil, and then turn off the heat
  • In a food processor add the bacon and 1/3 of the BBQ sauce from the sauce pan
  • Blend until incorporated and then fold the bacon mixture back into the sauce
  • Reserve for use
