Lite Chocolate Crinkle Cookies

"They're so great because they're a like a brownie in the form of a cookie. The convection oven makes them slightly crispy on the outside and moist and melty inside. Best of all, they're sort of guilt free because they're made with so little oil and egg whites," she said.

1 12 ounce pkg choc chips, divided
1 and 1/2 cups all purpose flour
1 and 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup brown sugar
2 Tablespoons canola oil
1 and 1/2 teaspoons vanilla
2 large egg whites
1/4 cup brewed coffee
1/4 cup powdered sugar
1/4 cup granulated sugar

Preheat oven to convection 350 or regular oven 375. Line 3 cookie sheets with parchment paper.

Melt 1 cup choc chips w/oil in microwave. Stir until smooth. Cool to room temp. Beat in brown sugar, egg whites and vanilla and coffee.

Combine flour, baking powder and salt in small bowl. Beat into choc. mixture in thee parts, add remaining chips.

Refrigerate dough until firm (about an hour or more).

Scoop w/small ice cream scoop and roll into 1" balls. Roll half of the balls in powdered sugar and the other half in granulated sugar. Place on cookie sheets.

Bake for 9 minutes. Do not over bake! Let cool on baking sheets and enjoy!
