Gazpacho Smoothie

May 4, 2009 Here's a fresh take on the smoothie that Mom's going to appreciate, because it's extremely healthy.

Small tomato, quartered (or 4 - 5 large, whole cherry tomatoes) 3/4 cup tomato juice 1/2 small garlic clove 2 tbsp. fresh cilantro, chopped 2 tbsp. lime juice (about 1/2 lime) Freeze the tomatoes until they are hard as rocks! Combine all ingredients in the blender and blend until almost smooth. Garnish with lime wedge and cilantro sprig, if desired.

Makes 1 Smoothie
