Recipe: Ice Cream Kolacky Cookies
4 cups flour
1 pound butter
1 pint vanilla ice cream
fruit fillings (I use solo)
powdered sugar for dusting
Put the flour and butter in a stand mixer with the dough hook attachment. Mix until it's crumbled. Add the ice cream and mix until a dough forms. Once a ball of dough has formed, wrap in plastic wrap and put in the fridge overnight.
Pinch off walnut size pieces and roll into a ball. place on an ungreased cookie sheet using your thumb, put an indentation in each fill with filling of your choice
Bake in preheated 350 degree oven for 20 minutes until lightly browned. cool on a wire rack and dust with powdered sugar.
(If you don't have a stand mixer, you can mix with your hands. You may need rubber gloves, since the dough gets very cold)
