Chicago Brunch with Santa

Chef Joseph Pierro created a very decadent item for the menu in honor of Jolly Saint Nick's visit, S'Mores French Toast. In addition to brunch, Santa will be posing for photos with restaurant patrons.

1. When Poaching Eggs it Helps to Use a Small Amount of Vinegar in the Poaching Water. It Allows the White to Wrap Around The Yolk

2. When Cooking Eggs Use a Low Flame to Avoid Browning the White. Makes For a More Flavorful Egg.

3. Seasoning Homemade Hollandaise: Lemon Juice & Salt. Try Whole Butter Instead of Clarified, Adds More Flavor

4. When Making Homemade Buttermilk Pancakes; Don't Worry About Getting the Lumps Out, Too Much Mixing will make for a Flat Pancake.
