Cut peaches in half; remove pit, season with salt and pepper. Spray with veg spray. Place cut side on grill. When browned, flip over and continue to cook on all sides.
1. Cut peaches into wedges, toss with thyme, mint and simple syrup.
2. Scoop ice cream into dish
3. Top with peaches
4. Top with whipped cream and chocolate shavings
