The cuatro is the national instrument of Puerto Rico and a symbol of the culture's holiday traditions, which include music and food. It's a program of the Puerto Rican Arts Alliance. Jose Allende, Executive Chef and Owner of Coco Restaurant, and Juan Quiñones, Head Chef, came into our ABC 7 Eyewitness News studio to tell us about the 15th Anniversary Cuatro Festival and to give us a taste of Puerto Rico.

Chef Juan's Recipe:
Monfongo Relleno de Bistec en Salsa
Ingredients:
1 1/2 Plantains
1/2 - Olive Oil
1 1/2 Teaspoon Garlic
1 1/2 Teaspoon Butter
Sirloin Steak
Adobo Season
Salsa Criolla
Toppings: Romaine Lettuce, Tomatoes, Mayonnaise, American cheese
Preparation:
Peel a Green Plantain.
Slice in two pieces, then fry for 7-10 mins. at 350 degrees in a fryer. In a pot fryer, just make sure it's as high as you can get french fries to a crispy state.
Remove plantain, and then smash down on a large plate to get the plantain flattened (such as bread six inches long)
Add steak and toppings.
