Mike Barkauskas of The Goddess And Grocer shared his delicious noodle recipe.

CHICAGO (WLS) -- March is national noodle month. According to the National Pasta Association noodle consumption is up now because of the cold weather as well as the Lenten season.



Mike Barkauskas of The Goddess & Grocer shared his delicious noodle recipe.



Ingredients:


7 lb Lo-Mein Egg Noodles, cooked


3 lb Daikon, shredded


1/2 lb Baby Spinach


2 lb Snow Peas, julienned


1/2 lb Radish, shaved


1 lb Carrot, shredded


1 lb Cucumber, thin sliced


1 lb Peanuts, toasted


1 bunch fresh Mint


1 bunch fresh Cilantro


1/2 cup Rice Vinegar


1/2 cup Mirin


1/4 cup Granulated Sugar


1/2 cup Soy Sauce


4 tbsp Ginger, minced


4 tbsp Garlic, minced


2 tbsp Lemongrass, minced


4 tbsp Black Sesame Seeds


1/2 lb thai chilies, thin sliced


4 tbsp salt & pepper



Preparation:


Combine all ingredients, garnish with cilantro & sesame seeds and serve chilled!
