The Sun-Times reports that just 40 restaurants have applied to take part for the entire five-day festival. Fifteen have applied to take part for just one day.
The Department of Cultural Affairs and Special Events said Wednesday it will extend the application deadline to Friday.
A spokesperson said many restaurants want to take part, but haven't had the opportunity to complete the application.
The Taste is scheduled for July 11 through the 15.
