Rio's D'Sudamerica's food options for Lent

Traditionally in Peru, the middle of February is a celebratory time with carnivals and festivities as families prepare for Lent. Once Lent begins on Ash Wednesday, February 22, it is a quiet and calm time filled with customary food and family gatherings.

Rio's D'Sudamerica Quinoa Seafood Paella
3 oz Calamari
2 oz Octopus
1 oz Mussels meat
2oz Scallops
2oz Whole mussels
1 Clam
3 oz Quinoa
1oz Red pepper
1 oz Peas
2 tbl Vegetable oil
1/4 oz Black pepper
1/4 oz Cumin
1oz Salt
1oz Cilantro
3 oz White wine
1 oz Brandy
2 tbl Base (Mixture of cumin, oil, onion and chile blended)

Quinoa preparation:
8oz Quinoa
2 cup Water
Let quinoa cook for 15 minutes on low heat.

Paella preparation:
1. Add base in a large shallow skillet to low heat
2. Add seafood
3. Add salt, pepper and cumin
4. Add oil
5. Let simmer
6. Add cilantro and wine
7. Add cooked Quinoa, peas and red pepper
8. Let cook for 10 minutes
9. Finally add brandy
10. Stir for 3 minutes and serve
