If you are celebrating Lent, chances are you have given up meat on Fridays. At Rio's D'Sudamerica, guests can enjoy some of the traditional Lent specials with a focus on a popular grain, Quinoa, which originated in Peru.

Traditionally in Peru, the middle of February is a celebratory time with carnivals and festivities as families prepare for Lent. Once Lent begins on Ash Wednesday, February 22, it is a quiet and calm time filled with customary food and family gatherings.
