Pumpkin Jam

  • 4 lbs pumpkin
  • 3 cloves
  • 1 cinnamon stick
  • 4 lbs sugar (approx.)

peel, seed and dice pumpkin. (2 inch cubes)

stick the cloves into the pumpkin.

put pumpkin and cinnamon stick in a sauce pan with two tbsp water. bring the mixture to a boil, reduce the heat to medium-low and cover the pot with a lid.

cook, stirring from time to time, until the pumpkin is very tender and as dry as possible. (about 20-30 minutes)

remove spices and puree pumpkin in food processor.

measure the pumpkin puree and add it back to the pan with an equal amount of sugar. cook gently until the sugar is melted and the mixture is translucent.
