Serving size: 4 individual apple pancakes
Apple Pancake Batter
one-half cup all purpose flour
one-half tbsp powdered sugar
one-quarter tsp salt
1 tsp baking powder
2 tbsp melted butter
2 egg yolks
2 egg whites
one-half cup half and half cream
1 tsp Nielsen and Massey vanilla extract (purchase at Eli's Café)
Mixing Procedure:
Sift flour, powdered sugar, baking powder and salt into mixing bowl, set aside. Hand whisk egg whites to soft peaks stage.
While whisking egg whites combine yolks, vanilla, half and half and melted butter. While whisking add flour mixture until batter is smooth.
Brown Sugar Smear
one-quarter cup butter
one-half cup brown sugar
1 tsp ground cinnamon
Mixing Procedure:
Mix brown sugar, cinnamon and melted butter until moist but crumbly.
1 8oz jar of Eli's prepared apple filling. (purchase at Eli's Café)
4 disposable black ramekins. (purchase at Eli's Café).
Assembly:
1. Grease ramekins generously
2. Sprinkle 2 TBSP brown sugar smear in
the bottom of the ramekin.
3. Next spoon one-quarter cup of Elis apple filling on
top of sugar smear
4. Finally pour one-quarter cup of pancake batter
on top of apples
5. Bake at 350 for 13-15 minutes.
6. Let set out of oven for 3- 5 minutes and
invert onto plate. Serve warm.
May freeze baked apple pancake in the ramekin up to 1 month wrapped.
Microwave instructions, if frozen: 30 seconds to a minute on high setting. Invert onto plate, serve warm.

Fun for the whole family at The Eli's Cheesecake Festival includes the following:
The Jesse White Tumblers flying over a giant Eli's Cheesecake. The Happiness Club performing their award winning musical show. Culinary demonstrations by some of Chicago's favorite chefs Band on the Run, Karen Heart Band and acts from the World Music Festival perform on the main stage Nagurski Kiddie Rides University of Illinois Chicago Sports Pavilion Kids Cheesecake Eating Contest Cheesecake Bingo Cheesecake Hula Hoop contest Martial Arts Demonstrations Classic Car Show (Sunday)The festival celebrates the 12th anniversary of Eli's Cheesecake World, the 62,000 square foot state-of-the-art bakery, café, retail store and visitors' center where Chicago's favorite dessert is made. A portion of the proceeds from food and cheesecake sales will benefit the New Horizons Center, a school for the developmentally disabled located adjacent to the bakery. In addition, donate any non-perishable food to the Greater Chicago Food Depository and get a free slice of Eli's Cheesecake.
The Main Stage sponsored by First Chicago Bank and Trust will feature live entertainment including Moscow Nights part of Chicago World Music Festival performances, The Teflons (bluegrass), Trinity Irish Dancers, Band on the Run (tribute to Paul McCartney), Neil Rose Band (Chicago blues), The Happiness Club, and many more to be announced. The Family Stage sponsored by Equal® will include interactive activities with the Dance Mates, Wright College and the Eli's Cheesecake Dancers, an interactive hip-hop group. The Culinary Tent sponsored by Michigan Apple Committee will feature samples and education with our culinary partners like Nielsen Massey Vanilla, Schokinag Chocolate, Michigan Apples and more, as well as live culinary demonstrations with Eli's pastry chefs and guest chefs. The Living Green Pavilion sponsored by Country Financial will include tips and information on ways to live more environmentally responsibly. It will feature the Chicago High School for Agricultural Sciences, Master Gardners and the Wright College Agricultural Sustainability program. Z Frank Chevrolet will also be displaying their new hybrid vehicle.
Eat dessert first, but save room for real food from our grill! The menu includes hamburgers, hot dogs and roasted corn on the cob. Also, visit our Culinary Pavilion to see chef demos and sample culinary delights from around the city.
Eli's will hold its special anniversary dock sale Saturday, 9:00 a.m. - 3:00 p.m., an hour before the festival begins. A large variety of cheesecakes will be available at special birthday prices. In addition, guests can visit the Eli's Cheesecake Retail Store and discover the largest selection of Eli's Cheesecake anywhere as well as house made cookies, fruit tarts, pies, birthday cakes and cupcakes created exclusively for Eli's bakery.
