Russian Tea Cakes

Mix together thoroughly
2 cups butter (softened)
1 cup confectioner's sugar
2 tsp vanilla

Mix together and then stir in butter mixture
4 1/2 cupts flour
1/2 tsp salt

Mix in 1 1/2 finely chopped nuts (I prefer pecans)

Chill dough. (Generally a few hours - I sometimes make batch before work and bake cookies when I get home) Roll into 1 1/2" balls

Place on ungreased baking sheet. Bake until set, but not brown. While still warm, roll in confectioners' sugar. Cool and reroll again.

(Remember there are no calories in December)

Temp 400 - Cook 10 - 12 minutes - Makes approximately 4 dozen cookies
