Grilled Hangar Steak Tacos

September 1, 2009 1lb hangar or skirt steak
12 mini corn tortillas
2 limes cut into eighths
½ bunch cilantro (chopped)
½ cup shredded Chihuahua cheese
¼ cup Luchini Roasted Garlic Oil
4T Chef Julius Grilled Steak Seasoning
(1 part each: Kosher Salt, black pepper, garlic powder, onion powder & ½ part cumin)

Direction for the steak:
Oil and season the steak on both sides
Place onto a VERY HOT grill, 3-5 min per side
Remove from grill and allow resting for 10 min
After resting, slice on a bias in 1/8 in pieces
Set aside and prepare the tortillas
Directions for tortillas:
Brush tortilla with small amount of oil, place oiled side down on medium heat grill
Sprinkle small amount of cheese on tortilla
Place another tortilla on top, brush with oil
As cheese has melted, flip and let cook for 1min
Remove from the grill; fill with steak, top with cilantro, and squeeze of lime
Other choices are, Pico de Gallo, Limon' Crema or Salsa Verde
