1 cup granulated sugar4 extra large beaten eggs (or 5 large eggs is better) 1 cup milk 1 cup heavy cream 2 teaspoons pure vanilla extract 3 cups cubed bread,or equivalent 1/2 pound of french bread. (stale bread is better) 15 ounces pureed sweet potatoes (2 extra large sweet potatoes) 1 cup packed light brown sugar 1/4 cup (1/2 stick) butter, softened 1 cup of raisins 1/4 cup Southern Comfort (soak raisins till plump)
Preheat the oven to 350 degrees F. Grease a 9 by 13 baking dish.
In a large mixing bowl - Mix and crumble together brown sugar, butter, and pecans (if desired). then add your sweet potato puree, granulated sugar, eggs, milk, heavy cream, and vanilla. Pour over cubed bread and let sit for 10 minutes
After you've let the mixture sit for 10 min. then add the raisins along with any liquor left in the bowl
Pour bread mixture into a prepared pan and bake for 35 to 45 minutes, or until set. Remove from oven.when golden brown.
Top with Whipped Cream, Maple/Vanilla Glaze, or Pecans if desired.
